This page provides a list of the most consumed vegetables in America.
The following table reproduces food availability data from the USDA ERS Food Availability (Per Capita) Data System and calorie information from the Agricultural Research Service National Agricultural Library.
Availability data are divided into the two sections, fresh retail weight and total farm weight.
Fresh retail weight measures how much of a fresh vegetable is available per person and is adjusted for how each vegetable is processed (e.g. how much is discarded). It does not include things like canned, frozen or juiced vegetables.
Total farm weight measures the equivalent amount of a fresh vegetable needed used to produce all forms of vegetable products (fresh, canned, frozen, etc.) and is not adjusted for processing in the same way as the fresh retail weight statistic.
For more information about what availability means, how it is measured, how it can be used and how these data are licensed, please read the parent page. There, you can also download a copy of this table in CSV format.
Calorie information is provided to indicate the relevance of each vegetable as a provider of food energy. It should be considered approximate.
All data are taken from the last year available (2010) and are computed for a one-year time span.
By default, the table is ordered by availability in total farm weight, but you can adjust the ordering by clicking on the title of each column.
